When a bake
does not go to plan.
A disappointing loaf or a crumbly cake is a reason to investigate, not to give up. Start with the recipe, the flour blend and the notes from your last attempt.
Did you change the flour?
Gluten-free blends are not all designed for the same job. Check whether the recipe uses a plain blend, a replacement blend for non-yeasted baking, or a bread and pizza blend. A swap can change the result substantially.
Next attempt: use the type specified and record the product name. Do not assume a successful cake blend will behave the same way in bread.
Does the dough feel unfamiliar?
Look at the consistency described in the recipe before adding more flour. Our pizza recipe expects a soft, sticky dough, not a conventional wheat dough.
Next attempt: keep to the stated amounts first and use the shaping method in that particular recipe.

Check whether it had cooled fully and whether ingredients, binders or tin size were changed. The timing of cooling can affect how well a gluten-free bake holds together.
Next attempt: follow the cooling instructions and slice only when ready. Record any substitutions rather than changing several things at once.
Did the outside colour before the centre cooked?
Compare your oven mode, shelf position and tin dimensions with the recipe. Record when browning started and whether the centre still had wet batter.
Next attempt: begin checking at the earliest stated time. For the lemon loaf, follow its instruction to cover loosely with foil if the top colours too quickly.
Read the lemon loaf checks ↗Are the results different every time?
Weigh your ingredients. Note the tin, oven setting and baking time. Check whether your flour already contains a binder before adding anything extra.
Next attempt: keep a short baking record. A useful note is more specific than “it did not work”: describe the crumb, moisture, rise and flavour.
Your next-attempt notebook
| Record | What to write |
|---|---|
| Ingredients | Exact flour blend, yoghurt or drink, and any substitutions. |
| Equipment | Tin dimensions, oven mode and shelf position. |
| What happened | Actual timings, colour, centre texture and cooling time. |
| One next change | The single adjustment you will compare on your next bake. |
