The thoughtful pantry
Choose for the recipe.
Buy with confidence.
A small, useful cupboard is a good place to begin. Start with what you want to cook, then choose ingredients that fit the recipe and your dietary needs.
One recipe before a full shopping basket.
Choose a dish, read the ingredients and check what is already in your kitchen. Buying a smaller pack first gives you a chance to see how it works before stocking up.
Match the flour to the bake
A gluten-free plain blend for cakes and cookies is not automatically interchangeable with a blend designed for yeast bread or pizza. Check the intended use on the pack and whether a binder is already included. Follow the recipe and the manufacturer’s guidance rather than assuming every blend behaves alike.
Yoghurt: keep it plain
For our lemon loaf and apple cake, the starting option is plain lactose-free yoghurt, with unsweetened plant-based yoghurt as an alternative. Choose the type specified in the recipe. A flavoured or sweetened pot changes what you add to the batter.
Choose the drink for the dish
Read the recipe before choosing an alternative to milk. Our béchamel uses unsweetened soya drink; our pancakes offer lactose-free milk or an unsweetened plant-based drink. Keep a note of the exact product you use so you can repeat or adjust the result.
Read the whole label
Check the ingredient list, allergens, suitability information and cross-contact statements each time you buy a packaged food. Product recipes can change. If a label is unclear, ask the manufacturer before deciding whether it suits your needs.
Compare more than the price on the shelf
Compare the unit price, pack size and how much you will use. For flour, record the exact blend and the recipe result. For yoghurt and drinks, note the flavour, sweetness and texture. A useful comparison starts with the same recipe and measured quantities.

Our approach to product reviews
Experience before a verdict.
This page is a buying guide, not a product ranking. A future review will identify the exact product, where and when it was bought, the recipe used and the result in our kitchen. We will distinguish a first impression from a repeated test and disclose any gifted product or commercial relationship.
Availability, prices and formulations vary. We will date product-specific observations so you can judge them in context.
